200ml newly squeezed lemon juice
500g fine sugar

For the Premix (makes 850ml, to serve 10)

Making the Syrup: Combine every items into a saucepan, bring to a light boil, mixing so the sugar melts. After that, turn off the burner allowing it to reach room temperature fully. Transfer to a sealable bottle, seal keeping it chilled, it will last for up to a month.

For the Premix: Mix all the liquid ingredients into a large bottle, let it rest for one hour, then pass it through preferably using muslin, making it completely strained.

When ready to serve: Add 85ml from the batch mix to a mixing glass packed with ice, and stir carefully for a minute until cold. Strain into a chilled martini glass or equivalent, decorate with the cranberries adding the final touch by giving it a brief mist of mandarin oil above the glass.
